These classic light and fluffy pikelets are beautiful served with fresh strawberry jam and cream

All you need to do is melt butter in a non stick skillet, then wipe it off with a paper towel before putting the batter in the skillet. It's a little trick I picked up from the clever folk over at America's Test Kitchen. The pikelets in the skillet in the photo above are the first batch. They came out perfectly, just like this:

Method Sift flour and soda together in to a medium bowl. Mix in sugar. Make a well in the centre and gradually stir in egg and enough milk to give a smooth, creamy pouring consistency. Rest 15 mins. Heat a frying pan on medium. Brush with butter. Drop tablespoons of batter from tip of spoon into pan, allowing room for spreading.

Method Sift flour, salt and soda into a large Mixmaster bowl. Add sugar, egg, milk and vanilla. Mix on low (1-2), until combined. Increase to MEDIUM (5) and beat for 1-2 minutes until smooth. Reduce to LOW (1) and fold into melted butter until combined. Place spoonfuls of mixture into a heated frying pan and cook until brown on both sides.
